OK, there is just no way around the fact that, I'm a total noob when it comes to aircraft.

How do I pick the correct (size/pitch) propellers from the sea of propeller offerings?

Here's what I do know... (which isn't much)
    1. The motors on my tricopter suggest: 11x7, 9x6 or 8x6.
    2. Other tricopter builders recommend that one of the front two motors should have a counter rotating prop.
    3. I'm looking for a fairly slow acting, relatively stable aircraft.

Here's an example of how my noob brain sees things:
Assuming the common motor rotational direction is clockwise,
And the most common prop type is "tractor"...
Reversing the motor polarity to acheive counter clockwise rotation,
And mounting the tractor prop upside down, would achieve???
    a. the same result of installing a "pusher" prop on a counter rotating motor.
    b. something akin to a pin wheel on the way to the crash site.
    c. none of the above.

What else do I need to know? ... besides everything! LOL

First... Turning the prop over doesn't do anything but make it less efficient.  It does not make it counter rotating.  We reverse props on a pusher installation because there is definitely a front and a back to a prop and we always want the front facing forward.  That keeps it efficient.  That's all it does!

Unless you plan to lift a big load (camera/fpv) on your tricopter, I'd probably get the smaller 8-6 you mentioned and start with that.  You might also like to get a set of 9-6's at the same time that you can grow into after you get a little hovering behind you and want it more responsive.  When you go prop shopping, you're going to figure out quickly that there isn't much of a selection in counter rotating props so your choices will be few.
